Shell Pasta with Eggs, Queso Blanco, and Bacon
This is a quick meal I came up with on a whim kinda late last night, when I was starving and just had to work with what I had. Luckily I had some decent shit lying around so this turned out pretty great.

Ingredients
- 1/2 pound medium shell pasta cooked a little softer than al dente
- 4 ounces queso blanco, haphazardly cubed
- 4 strips bacon
- 2 organic eggs
- butter
- evoo
- kosher salt
- black pepper
- garlic powder
- crushed red pepper
- thick, sweet chili sauce, such as sriracha or sweet sunshine
- optional: finely chopped flat leaf parsley, pimentón de la vera
Directions
- Cook pasta and set aside. Drizzle with olive oil.
- Fry bacon to desired crispiness. Add queso fresco to the same pan and cook until slightly golden and soft. Drain bacon and cheese on paper towels.
- Drain bacon grease from pan, saving just a little. Or if you don’t want the grease, wipe pan with paper towel and or/rinse it out.
- Add a pat of butter and some evoo to the hot pan.
- Crack eggs into pan and scramble just until soft.
- Toss in pasta, bacon, cheese, salt, pepper, and crushed red pepper.
- Optional: top with parsley and just a little chili sauce; too much will overpower the other flavors.
Serves 2-3

yum. do you think it would taste as good without the bacon?

yes. the bacon adds salt and crunch, so you’d need to season the pasta more. or add some kind of fried crunchy vegetable. fried broccoli is really good!

Also it must be noted that Mollie is one of the most skilled food pairing geniuses I know. Whenever I try to do something as clever, it just ends up looking and tasting like something a 10 year old made for dinner…

this looks pretty amazing. also, i don’t know if i’ve ever had queso blanco, that i know of (although i suspect i must have at some exican restaurant along the way). the taste is mild, right? like a soft mozzarella?

yeah it’s soft and mild. but it’s so good fried! mmmm.
