Here's my beet-pickling cheat:  you know those great beet pickles that Rick's Picks sells?  I eat them all (that's not the secret) but keep the pickling juice and just slide some chunked-up steamed beets in there and let them sit for a week or so and they soak up the gingery goodness.</description>
